Life-changing

I recently found a recipe for a delicious cookie dough. It had cream cheese, sugar, and peanut butter. Mmmm. And it had M&Ms and chocolate chips…and they were miniature! Is this real life? Then I realized it was never baked and you were expected to eat it in dough form. Wait, what?! It was hard to believe there was a cookie dough that I wouldn’t get in trouble for consuming raw. I would say my life changed when I made this recipe, but that’s a bit melodramatic.

…Okay, my life kind of changed.

If you are the type of person that occasionally (maybe every time?) makes cookies for the sole purpose of eating the dough, this recipe is for you! With no eggs, the dough is 100% safe to eat raw. The fact that I can now eat raw cookie dough without guilt or scorn makes me a very happy person.

I made this dip for a going away party for one of my dear friends. She is leaving for a zoo internship in Texas, so we of course had to throw a surprise animal-themed party. To fit the theme, the dip was served alongside animal crackers. I could imagine graham crackers, cookies, pretzels, and fresh fruit would be equally delicious dippers.

Monster Cookie Dough Dip

Adapted from: http://www.skiptomylou.org/2012/02/21/monster-cookie-dough-dip/

Note: This makes A LOT of dip. Feel free to half the recipe or freeze any leftovers.

Ingredients:

8 oz cream cheese, softened

1 stick unsalted butter, softened

1 cup creamy peanut butter

1 tablespoon vanilla extract

1 cup powdered sugar

3 tablespoons brown sugar

3 tablespoons all-purpose flour

1 cup regular oats

1 cup miniature chocolate chips

1 cup miniature M&Ms

Method:

1. Using a stand mixer or a handheld mixer, beat the cream cheese, butter, peanut butter, and vanilla on medium speed until the mixture is light and fluffy. This took around 5 minutes.

2. Add 1/2 of the powdered sugar, the brown sugar, and the flour. Mix until well incorporated. Add the remaining powdered sugar and mix thoroughly.

3. Using a wooden spoon, stir in the oats, chocolate chips, and M&Ms. Serve with your favorite dippers. Refrigerate or freeze any leftovers.

Enjoy!

To Alexis: We’ll all miss you so much over the next three months. However, this will be such a wonderful experience for you. The animals are so lucky to have you to take care of them! Love you and miss you already!

Happy Baking!
