A Hunni-sweet Birthday

Part 2 of the blog birthday festivities: Hunni’s Oreo ice cream cupcakes to ring in her new decade! Hooray. (For a recap of my love for birthdays, just check the last post!) We invited a few of our friends over to help make her birthday special. We celebrated her big day with food, fun, and a few new furry friends 🙂

These cupcakes were a hit. They were also incredibly easy to make – literally, I was finished in 15 minutes flat. And really, who doesn’t love cookies ‘n cream ice cream, an Oreo crust, and homemade hot fudge sauce? No friend of mine.

I wish the happiest year to one of my greatest friends! I’ve lived with this sweetie (with a name like that, how couldn’t she be?!) for the past 2 years and we have gotten so close. She has always been one of my most enthusiastic taste testers and I could never thank her enough for all of her encouraging words. 🙂 Happy birthday, love!

Oreo Ice Cream Cupcakes

Yields: 12 cupcakes


1 cup crushed Oreos

2 tablespoons melted unsalted butter

Your favorite brand of cookies ‘n cream ice cream

Hot fudge (recipe below)

Cool Whip


1. Line cupcake tins with liners or spray with nonstick spray.

2. Combine the crushed Oreos and butter in a medium bowl. Divide this mixture in half. Using the first half, firmly press equal amounts  into each cupcake liner.

3. Spoon ice cream over the crust. You want enough to fill the cup, but not too much to overflow. You can simply eyeball this! Cover each cupcake with the remaining crumb mixture.

4. Cover with foil and a freeze for at least an hour.

5. When ready to serve, top each cupcake with a dollop of Cool Whip. Top generously with hot fudge and leftover Oreo crumbs (optional).

6. Serve immediately and enjoy! Store any leftovers in the freezer.

Heavenly Hot Fudge

1 can sweetened condensed milk

1 cup semi-sweet chocolate chips

2 teaspoons vanilla extract

3 tablespoons unsalted butter


1. Add all ingredients to a medium saucepan.

2. Heat over low heat, stirring occasionally until completely melted and fully incorporated.

3. You can store leftovers in the fridge in an airtight container. Simply reheat when ready to use again. Enjoy!
